- 16 oz lentils, any kind you like. I like green.
- 1 sweet onion, chopped
- 2 medium carrots, cut into chunks
- 2 stalks celery, chopped
- 1 large russet potato, or your favorite spud
- 2 tbls. canola oil
- 1 bay leaf
- handful of tarragon
- handful of oregano
- salt to taste
Chop carrots, onion, celery and potato while the four year old nephew begs for a carrot. Peel carrot and administer to four year old. Heat canola oil in a BIG pot and toss in all veggies, saute until onions are translucent. Throw in bag of lentils, 6 cups of water, and spices. Simmer until veggies and lentils are tender, about 20 minutes. Feed to 1 year old nephew, who will grab the spoon and shake it at you to ask for more. Burst with pride and enjoy leftovers while blogging.
