Portland Saturday

16 oz lentils, any kind you like. I like green.
1 sweet onion, chopped
2 medium carrots, cut into chunks
2 stalks celery, chopped
1 large russet potato, or your favorite spud
2 tbls. canola oil
1 bay leaf
handful of tarragon

2 medium carrots
2 stalks of celery
1 12 oz can black olives
1 12 oz jar artichoke hearts, drained
4 stalks green onions
1/2 16 oz bag frozen peas, cooked then cooled
